Old Bay Seasoning

2 tsp ground bay leaf (about 20 medium size dry leaves)
2 Tbs + 1 tsp celery salt*
1 Tbs sweet paprika
1 tsp dry mustard powder
1/2 tsp ground ginger
1/2 tsp ground black pepper
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
1/4 tsp cayenne
1/8 tsp ground allspice
1/8 tsp ground clove
1/8 tsp cardamom, optional

Process 20 whole bay leaves in a spice grinder until broken down into a fine powder. About 30 long (3-4 second) pulses.

Whisk all spices together in a small bowl to combine well. Store in an airtight container.

*To make a salt-free version, substitute 3 1/2 tsp of ground celery seed.
