George Galerstein's Cabbage Soup

1 lb ground chuck or round
1 pkg Lipton Onion Soup Mix 
3 Tbs minced fresh parsley (or 1 1/2 T dried)
1 tsp garlic powder
1/2 cup light brown sugar
1/2 cup vinegar
2 quarts cold water
1 small head green cabbage

Brown beef in a large stockpot or Dutch oven, then drain excess fat.  While beef is browning, core and slice the cabbage into thin strips.  Add cabbage and remaining ingredients to the stockpot and mix well.  Cover, bring to a boil and then reduce to a simmer.  Cook for 2 hours, stirring occasionally.

Note:  George Galerstein was my mother's boss while she worked at Bell Helicopter back in the 1960's.  While the original recipe calls for white vinegar, I like to use apple cider vinegar and add 1/4 tsp of whole caraway seeds.
