Compound Butters

Simply blend the desired combination of ingredients into ½ cup (1 stick) of softened sweet butter, and chill at least 8 hours before use. For best flavor, allow the butter to return to room temperature before serving.

Mexican Butter
2 cloves garlic, minced
1 - 2 seeded and minced jalapeño peppers
1 Tbs chopped fresh cilantro

Classic Herb Butter
2 Tbs fresh dill, chopped
1 Tbs fresh parsley, chopped

Seafood Butter
2 tsp minced onion
1-1/2 tsp Old Bay seasoning

Citrus Butter
1 Tbs lemon zest
1 Tbs orange zest

Honey Citrus Butter
2 Tbs honey
1 Tbs orange zest (or lemon zest)

Pecan Praline Butter
1/3 cup pecans, toasted and ground
2 Tbs brown sugar

Mediterranean Butter
3 Tbs minced olives (kalamata or similar)
1 clove garlic, minced
2 Tbs basil infused olive oil

Lemon Anchovy Butter
2 tsp anchovy paste
1 tsp lemon zest
1 tsp lemon juice

Caesar Butter
2 Tbs Parmesan cheese, grated
1 tsp anchovy paste
1 tsp lemon zest
1 tsp Worcestershire Sauce

Lemon Pepper Butter
1 tsp black pepper
1 tsp lemon zest
1 tsp lemon juice

Asian Butter
1 Tbs fresh ginger, grated
1 tsp lime zest
1 tsp dark sesame oil

Cranberry Butter
2 Tbs cranberry sauce or puree

Bourbon Butter
2 Tbs bourbon

Pesto Butter
2 Tbs pesto

Bleu Cheese Butter
1/4 cup crumbled bleu cheese

Chili Butter
1 Tbs chili powder
1 tsp cumin
1/2 tsp cayenne pepper

Blackberry Butter
2 Tbs blackberry jam
2 tsp crème de cassis or Chambord (optional)

Peach Butter
2 Tbs peach jam (or puréed preserves)
2 tsp peach schnapps (optional)

Apricot Butter
2 Tbs apricot jam (or puréed preserves)
2 tsp amaretto (optional)

Cinnamon Brown Sugar Butter
2 Tbs brown sugar
1 tsp ground cinnamon
