Sour Cream Waffles
1-1/2cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 Tbs sugar
3 eggs, separated
3/4 cup milk
3/4 cup sour cream
1/2 cup unsalted butter, melted
Preheat a waffle iron according to manufacturer's instructions. Spray with non-stick spray or brush with oil.
Sift together flour, baking powder, baking soda and sugar in a small bowl, set aside.
Separate eggs. Beat egg yolks until light yellow in color. Whisk in milk, melted butter and sour cream.
Beat egg whites until stiff peaks form.
Combine flour mixture with egg mixture and stir just until moistened.
Fold in egg whites until combined and spoon onto hot waffle iron. Cook until steaming stops and serve immediately.
