Rhubarb Upside-Down Cake
1 Tbs unsalted butter
3 cups rhubarb, sliced 1/2-inch thick
1 cup sugar
2 Tbs all-purpose flour
1/4 tsp ground nutmeg
1/4 cup unsalted butter, melted
1-1/2 cup all-purpose flour, sifted
3/4 cup sugar
2 tsp baking powder
1/2 tsp ground nutmeg
1/4 tsp kosher salt
2/3 cup milk
1/4 cup unsalted butter, melted
1 egg, beaten
Preheat oven to 350°F.
Grease a 10-inch iron skillet with 1 Tbs of cold butter. Pour sliced rhubarb into the skillet. Mix together 1 cup sugar, 2 Tbs flour and 1/4 tsp nutmeg and sprinkle evenly over the rhubarb. Drizzle rhubarb with 1/4 cup melted butter.
In a mixing bowl, combine 1 1/2 cup flour, 3/4 cup sugar, baking powder, 1/2 tsp nutmeg and salt. Mix together milk, 1/4 cup melted butter and egg and pour into the dry ingredients. Stir until well combined and spread over rhubarb.
Bake for 35 minutes or until a tester inserted in the center comes out clean. Loosen edges immediately and invert onto a serving plate. Allow to cool slightly, and serve warm. Top with whipped cream or Rhubarb Syrup if desired.
