PauPau's Favorite Spice Cake
2 cups all-purpose flour, sifted
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup unsalted butter (1 stick)
1 cup sugar
1 egg, beaten
1 cup applesauce
1 tsp baking soda
2 Tbs hot water
1 cup raisins
1/2 cup chopped pecans
Preheat oven to 350°F. Grease and flour a Bundt pan and set aside.
In a small bowl, sift together flour, cinnamon and nutmeg and set aside.
In a mixer, cream together the butter, sugar and egg. Mix in applesauce, then blend in spiced flour 1/3 at a time. Before adding the final 1/3 of the flour, stir baking soda into hot water and pour it into the batter, then add the final 1/3. Beat well.
Stir in raisins and nuts until evenly distributed. Pour into prepared Bundt pan and bake for 45 minutes or until a tester inserted in the center comes out clean. Cool for 5 minutes in the pan, then remove the cake from the pan and continue cooling on a rack. Frost when completely cooled with Mocha Frosting or Cream Cheese Frosting.
