Neufchatel Frosting

3-1/2 cups confectioner's sugar, sifted
8-oz Neufchatel Cheese (or cream cheese)
1-1/4 tsp pure vanilla extract
1/2 cup unsalted butter
1 cup chopped pecans

Bring cheese and butter to room temperature. In a mixer, cream together the Neufchatel (or cream) cheese, butter and vanilla extract until well mixed and aerated. Lower speed and blend in the confectioner's sugar. When completely mixed, stir in the chopped pecans.
