Maui Sauce
1 cup pineapple juice
1/4 cup rice wine vinegar
3 Tbs mayonnaise
1 tsp soy sauce
Combine pineapple juice and rice wine vinegar to a boil in a small saucepan. Boil 8 -10 minutes, or until reduced by half. Remove from the heat and stir in soy sauce, cool slightly. Just before serving, whisk the mayonnaise into the warm sauce.
Excellent with grilled seafood and Pacific Crab Cakes.
