Cream Cheese Frosting
2, 8-oz packages cream cheese
1/2 cup (1 stick) unsalted butter
4 cups confectioner's sugar, sifted
4 tsp vanilla extract
Bring cream cheese and butter to room temperature. In a mixer, beat together softened cream cheese and butter until well combined. Add confectioner's sugar and vanilla alternately until frosting is smooth and creamy.
This frosting can easily be flavored to complement whatever cake you are making by substituting part or all of the vanilla extract with other extracts or liqueurs. I like to add orange zest or lemon zest as well, especially for carrot or spice cakes.
