Sweet and Sour Red Cabbage
2 Tbs rendered bacon fat
4 cups shredded red cabbage (1 small head)
2 cups cubed tart apple (2 - 3 apples)
1/2 tsp caraway seed
1/4 cup water
1-1/4 tsp salt
1/4 tsp pepper
1/4 cup brown sugar
1/4 cup apple cider vinegar
Shred cabbage into 1/4-inch strips. Peel, core and cube 2 - 3 tart apples to 1/2-inch pieces. Set aside.
In a large skillet, melt bacon fat over medium-high heat. Add cabbage and apples and toss with tongs to sauté about 1 minute. Lower heat to low setting and add caraway seed, salt, pepper and brown sugar. Toss to coat. Add water and apple cider vinegar and toss to coat again.
Cover pan and cook over low heat, stirring occasionally for 15 minutes for crisp cabbage, for up to 30 minutes for tender cabbage.
