Stagecoach Inn Squash Casserole

2 lbs yellow squash
4 eggs
2 Tbs sugar
2 tsp cinnamon
Salt
Pepper
Sweet Paprika

Preheat oven to 350°F and butter a 2-qt baking dish. Set aside.

Slice squash into thick slices. Boil squash in a large saucepan until just tender but not mushy. Drain very well, and return drained squash to the pan off the heat. Mash coarsely with a potato masher or spoon.

In small bowl, combine eggs, sugar and cinnamon and beat slightly. Pour egg mixture into mashed squash and stir to combine. Add salt and pepper to taste.

Pour squash into prepared baking dish and sprinkle the top with sweet paprika. Bake until casserole is set, about 20 – 25 minutes.
