Red Onion Marmalade

1 Tbs extra virgin olive oil
1 1/4 lbs red onions, finely chopped
3 Tbs balsamic vinegar
1 Tbs light brown sugar
1/2 tsp grated orange zest
1/2 tsp salt

In large skillet, heat oil over low heat. Add onions and cook, stirring frequently, for 15 minutes or until soft. Stir in vinegar, brown sugar, orange zest, orange juice, and salt. Cook, stirring frequently, for 15 minutes or until glossy.

Serve warm or at room temperature. It is excellent with roasted, grilled or smoked pork, beef, or duck.
