Poppy Seed Dressing

1-1/2 cups sugar
2/3 cup white wine vinegar
3 Tbs finely minced onion
2 tsp kosher salt
2 tsp dry mustard
2 cups canola or vegetable oil
3 Tbs poppy seed

Combine sugar, vinegar, onion, salt and mustard in a blender and puree. On lowest speed, slowly drizzle in the oil to create an emulsion. When emulsified, stir in poppy seed. Serve over mixed fruit salads.
