Peanut Soup
2 Tbs unsalted butter
2 Tbs onion, minced
1 stalk celery, sliced
2 Tbs flour
3 cups chicken broth
1/2 cup smooth peanut butter
1/4 tsp kosher salt
2 tsp lemon juice
2 Tbs chopped peanuts
Melt butter in a large saucepan and sauté onions and celery until translucent, about 5 minutes. Add flour and mix well. Cook roux 1 minute more.
Stir in the chicken broth and allow it to simmer 30 minutes. Remove from the heat and strain to remove all solids. Return hot broth to the pan and stir in peanut butter, lemon and salt. Cook 5 minutes more and serve. Garnish each serving with 1 tsp chopped peanuts.
