Orange Blossom Muffins
1-1/2 Tbs all-purpose flour
1/2 tsp cinnamon
1/2 tsp nutmeg
1 Tbs unsalted butter
1 egg, beaten
1/2 cup sugar, divided
1/2 cup orange juice
2 Tbs vegetable oil
1/2 cup orange marmalade
1/2 cup chopped pecans
1 tsp orange zest
2 cups Buttermilk Baking Mix
Preheat oven to 400°F. Spray a 12-muffin pan with non-stick cooking spray and set aside.
To make the streusel topping, combine 1/4 cup sugar, flour, cinnamon and nutmeg in a small bowl. Cut in butter until mixture is crumbly. Set aside.
In a large bowl, combine egg, 1/4 cup sugar, orange juice and vegetable oil and beat for 30 seconds. Stir in the marmalade and pecans. Add the Buttermilk Baking Mix to the mixture and stir just until combined.
Fill prepared muffin tins 2/3 full and top with streusel topping. Bake for 20 - 25 minutes.
