Nutty Harvest Grain Pancakes & Waffles

Harvest Grain Mix:
7-3/4 cups all-purpose flour
3-1/2 cups cornmeal
2 cups finely chopped pecans
1-1/2 cups whole wheat flour
1-1/8 cups quick-cooking oatmeal (not instant)
1 cup wheat bran
3/4 cup sugar
5 Tbs +2 tsp baking powder
2-1/2 tsp baking soda
2-1/3 tsp dry malt*
1-3/4 tsp table salt

Waffle/Pancake Batter:
1-3/4 cups buttermilk for waffles OR
2 cups buttermilk for pancakes
2 large eggs
2 cup Harvest Grain mix
2 tsp vanilla extract
6 Tbs unsalted butter, melted
1 tsp water

To prepare Harvest Grain Mix, combine all ingredients and store in an air-tight container for up to 3 months in the refrigerator.

For waffles or pancakes, put buttermilk in a bowl and whisk in the eggs. Add the waffle mix and stir just to combine. Add the vanilla, melted butter and water and stir until incorporated.

Cook in a skillet or on your griddle according to manufacturer's instructions.

*Dry malt is available from home-brewing supply stores, or it may simply be omitted.

Be sure your baking powder and baking soda are fresh when preparing the dry mix to get the longest possible shelf life from the mix.
