Nono's Classic Cornbread

2/3 cup yellow cornmeal
1/2 cup flour
1/2 tsp kosher salt
1-1/2 tsp baking powder
1/4 cup sugar
1 egg, beaten
1 cup milk
2 Tbs bacon fat

Preheat oven to 450°F.

Melt bacon drippings in an 8-inch iron skillet and set aside.

Combine dry ingredients in a bowl. Combine egg and milk and stir into dry mixture until incorporated. Pour warm bacon drippings into the batter and stir in well.

Pour the batter into the warm iron skillet and bake at 450°F for 20 minutes.

Nono was my beloved grandmother on my mother's side and she collected demitasse china cups. As a toddler, I was fascinated with her collection as they were "just my size." However, every time I would reach for one I would be pulled back and told "Those are no-no's. Those are HERS". Therefore, I naturally assumed her name was Nono. Try as she might to get me to call her some other name, it never worked and she finally resigned herself to the fact that her name was forevermore "Nono". I first learned to cook at her apron strings, and for that I will be forever grateful.
