Jetton's Barbeque Sauce

1 cup ketchup (I prefer Heinz)
1/2 cup apple cider vinegar
1/2 tsp kosher salt
3 stalks celery, minced
1 clove garlic, minced
1 Tbs butter
1 tsp paprika
1 tsp sugar
1 tsp chili powder
1-1/2 cups water
3 bay leaves
2 Tbs minced onion
4 Tbs Worcestershire Sauce
1/4 tsp pepper

Combine all ingredients in a large saucepan and bring to a boil. Lower heat and simmer 15 minutes. Remove from heat and strain to remove solids. Chill until used.

Unlike our Northern (ahem) cousins, Texas barbeque sauce tends to be thin, spicy and vinegary versus thick and sweet.
