Hush Puppies
1 cup cornmeal
1/4 cup all-purpose flour
2 Tbs baking powder
1/2 tsp salt
1 cup buttermilk
2 eggs, beaten
1 Tbs onion, minced
1 clove garlic, minced
Combine cornmeal, flour, baking powder and salt in a mixing bowl. Add buttermilk and eggs and beat to form a stiff batter. Add minced onion and garlic and stir well to distribute evenly. Cover the bowl with plastic wrap, and refrigerate it 1 - 2 hours, or until the batter is spongy.
Fill a deep frying pan or large saucepan with 2 inches of vegetable oil, making sure oil does not come up more than 1/3 the height of the pan. Heat the oil over medium-high heat to 375°F.
Drop the batter by tablespoonsful into the hot oil and fry until golden brown. Remove and drain on paper towels. Keep warm and serve with sweet butter.
Alternatively, you may cook the hush puppies on a greased griddle or skillet. Scoop out 2 Tbs of batter, flatten slightly and cook over medium-high heat until golden brown on both sides.
