Honey Cole Slaw

1 medium head green cabbage
2 tsp salt
1 cup sour cream
1/4 cup honey
1/4 cup apple cider vinegar
1/2 small red onion, minced
salt and pepper to taste

Thinly shred cabbage and toss with 2 tsp salt. Set in a colander over a large bowl and keep in the refrigerator for 3 -4 hours. Rinse and drain well.

In a large bowl, combine shredded cabbage with all other ingredients. Toss well and serve immediately.
