Green Goddess Mayonaisse
3/4 cups mayonnaise
2 scallions, thinly sliced (white portion with 3 inches of green portion)
2 Tbs chopped fresh flat-leaf parsley
2 Tbs chopped fresh tarragon, or 2 tsp dried tarragon
2 tsp snipped fresh chives
2 anchovy fillets, minced (optional)
Combine all and refrigerate, covered, for 1 – 2 hours before serving.
