Digby Pines Onion Tart

1 9" pie shell
2 Tbs vegetable oil
1 lb white onions, very thinly sliced
1/4 lb bacon, diced
2 large eggs, beaten
2 Tbs flour
1/3 cup milk
1/4 cup heavy cream
1/4 tsp ground nutmeg
Salt & Pepper to taste
1/4 lb grated Gruyere cheese

Preheat oven to 350°F. Bake pie shell in 9” pie pan for 12 minutes or until lightly browned, and set aside. Adjust oven temperature to 375°F. 

Cut bacon to 1/4-inch dice. In small saucepot, bring water up to a strong simmer and cook bacon for one minute. Drain well and set aside. 

Preheat large skillet over medium heat. Add 2 Tbs oil and very thinly sliced onions. Sweat onions for 10 minutes, stirring frequently until softened. Do not allow onions to get any color. Meanwhile, combine eggs, flour, milk, cream, salt, pepper and nutmeg in a bowl. Mix well to incorporate eggs.

Sprinkle baked pie crust with drained par-cooked bacon. Add the onions in an even layer. Cover all with egg mixture and sprinkle with the grated cheese. Bake at 375° for 20 minutes, or until pie is set and lightly browned. Let stand a few minutes, then slice and serve warm.
