Crunchy Bacon Coleslaw

4 cups green cabbage, shredded
1 cup red cabbage, shredded
2 tsp salt
3/4 cup mayonnaise
1 Tbs sugar
1-1/2 tsp apple cider vinegar
1/2 cup chopped peanuts
5 slices crisp bacon, crumbled

Thinly shred cabbage and toss with 2 tsp salt. Set in a colander over a large bowl and keep in the refrigerator for 2 - 3 hours. Rinse and drain well.

In large bowl, combine shredded cabbage, mayonnaise, sugar and vinegar and toss well to coat. Refrigerate until served. Just before serving, toss in chopped peanuts and crumbled bacon.
