Corn Fritters
1/2 cup all-purpose flour
3/4 tsp baking powder
2 tsp sugar
1/4 tsp salt
1 egg, beaten
1 Tbs vegetable oil
1 cup canned corn, well-drained
Vegetable oil for frying
In a deep pan or fryer, bring vegetable oil to 375°F.
In a small bowl, combine flour, baking powder, sugar and salt and stir well to combine. Add well-drained corn and stir to coat kernels. Add beaten egg and oil and stir to make a thick batter.
Drop by tablespoons (or use a #30 or #40 ice cream scoop) into hot oil and fry until golden, turning once. Sprinkle with a light bit of salt when removing from the oil and drain on paper towels.
