Chez Melange Meatloaf
(Adapted from Chez Melange, Redondo Beach, CA)
2 Tbs unsalted butter
2 scallions, sliced
1 cup onion, diced
1/2 cup bell pepper, diced
1/3 cup celery, diced
1 Tbs garlic, minced
1 lb ground beef
1 lb ground pork
1-1/2 tsp salt
1 tsp cumin
1/2 tsp black pepper
1/4 tsp cayenne pepper
1/8 tsp nutmeg
2 bay leaves
1/2 cup ketchup
1/2 cup half and half
2 Tbs Worcestershire Sauce
1-1/2 tsp Tabasco Sauce
2 eggs, slightly beaten
1 cup panko (Japanese bread crumbs)
Preheat oven to 350°F.
In large skillet, sauté onions, scallions, bell pepper, celery and garlic until soft. Stir in salt, cumin, black pepper, cayenne, nutmeg and bay leaves. Cook 1 minute, then stir in ketchup and half and half. Simmer 2 minutes and remove from heat. Cool and remove bay leaves. Stir in Worcestershire Sauce and Tabasco Sauce.
In a large bowl, combine beef, pork, eggs, and panko. Add cooled vegetable medley and combine until well blended.
Spoon into a 9 x 5 loaf pan. Bake 1 hour 10 minutes, or until internal temperature registers 160°F. Cool in pan on wire rack 5 minutes. Drain, unmold and slice to serve.
