Buttermilk Dressing (No-Fat)

1/2 cup buttermilk
1 Tbs red wine vinegar
1 tsp Dijon mustard
1/2 tsp minced garlic
1/2 tsp black pepper
2 - 3 scallions, sliced
Salt to taste

Mix all in a blender, pulsing until scallions are just incorporated. Keep refrigerated until used.

Makes 3/4 cup.
