Bran Waffles
2 eggs, separated
1-1/2 cups milk
3/4 cup All Bran cereal
1-1/2 cups flour
2 Tbs sugar
4 tsp baking powder
1 tsp kosher salt
1/2 cup vegetable oil
Preheat a waffle iron according to manufacturer's instructions. Spray with non-stick spray or brush with oil.
Separate eggs. Beat egg yolks well, and add milk and All Bran cereal. Soak for 5 minutes.
Meanwhile, beat egg whites until stiff peaks form.
In a large bowl, sift together flour, sugar, baking powder and salt. Add oil to the bran mixture and mix well. Pour the bran mixture into the dry ingredients and stir just until moistened.
Fold in egg whites until combined and spoon onto hot waffle iron. Cook until steaming stops and serve immediately. These waffles are excellent served with your favorite warm fruit compote.
