Apricot Chicken
1, 3-lb chicken, cut into pieces
1, 10-oz jar apricot preserves
1/4 cup lemon juice
2 tsp soy sauce
1 cup panko bread crumbs
1/4 cup unsalted butter, melted
Preheat oven to 350°F. Spray a 9" x 13" baking dish with non-stick spray.
In a small bowl, combine preserves, lemon juice and soy sauce. Measure out 1/2 cup and brush over chicken pieces. Roll chicken pieces in panko crumbs and place skin side up in baking dish. Drizzle chicken pieces with melted butter and bake 1 hour or until tender.
Heat remaining preserve mixture in a small saucepan and serve with the chicken.
