Salsa Fresca

2 medium ripe tomatoes
1/3 cup diced red onion
1 tsp fresh cilantro, minced
1/2 tsp lime juice
1/4 tsp sugar
salt and pepper to taste

Seed and dice tomatoes. In a non-reactive bowl, combine tomatoes with red onion, cilantro, lime juice, sugar, salt and pepper to taste. Refrigerate at least one hour for flavors to meld.
